Fudgy Brownies

Fudgy
Brownies - with icing, if desired - but who wouldn't want icing,
too?
BROWNIES:
1 cup margarine
2 cups sugar
3 eggs
1 teaspoon real vanilla extract
¾ cup cocoa
¼ cup vegetable oil
1 cup flour
½ teaspoon salt
Cream ½ cup of margarine with sugar. Add eggs and beat until light.
Add vanilla. Using a whisk, mix cocoa and oil, then, on low heat,
melt remaining margarine with this mixture. Cool. Beat into first
mixture. Add flour and salt. Mix well and pour into greased and
floured pan (9" x 13"). Bake in 350º oven for 25 - 30 minutes (test
with a toothpick). Cool. Spread with icing after brownies are cool.
ICING:
6 Tablespoons butter
½ cup cocoa
2 2/3 cup powdered sugar
1/3 cup milk
1 teaspoon vanilla
Cream butter. Add cocoa and sugar alternately with milk. Beat to
spreading consistency, adding 1 Tablespoons of milk if needed. Blend
in vanilla. Spread on cooled brownies. |
