Peanut Butter Popcorn Balls

   This is one of my family's all-time favorite recipes. Peanut butter popcorn balls are delicious, chewy rather than crispy, and easy to eat. I started making these for Halloween many years ago. Now the parents of those long ago trick or treat-ers still come by on Halloween night, sheepishly asking for a popcorn ball -- and "two or three would be wonderful, thanks so much, I look forward to them all year." I hope you enjoy them as much as we have. They're a healthier snack than most, containing both peanut butter and popcorn, even though there is sugar in them. Enjoy! And Happy Halloween!

8 cups of popped corn, unsalted
½ cup sugar
½ cup light corn syrup
½ cup creamy (crunchy would be OK, too) peanut butter
½ teaspoon of vanilla

Combine sugar and corn syrup in a small saucepan. Cook over medium heat, stirring constantly, just until mixture comes to a full rolling boil. Remove from heat and stir in peanut butter and vanilla. Immediately pour over popcorn; mix well. With buttered hands, form mixture into balls. Depending on the size, you should get 10-15 popcorn balls.
